The Nepalese are not famous for their desserts so it was a real creative challenge to find traditional Nepalese ingredients that went well together into a pudding.
I knew very little about their style of cooking. As I started to research, I was stunned by the unusual use of ingredients and the diversity of their staple foods.
I am a traditional British chef but I really enjoyed the challenge of creating a fusion between the two cultures and cuisines. I learnt so much about Nepalese cooking, including its relevance to today’s healthy eating.
It uses fresh ingredients including chillies, garlic, turmeric, ginger and fenugreek seed. All so easy to source in Kent and with such health giving qualities.
After much deliberation I came up with the following
- Momo Pot Stickers with Chocolate and Chilli
- Green Tea Ice Cream
- Pumpkin and Tea Pie
- Rice pudding (kheer)
- Gajar ko haluwa (sweet carrot pudding)
- Milk balls with salty tea pistachio
I hope you like them. I think they are a perfect way to round off a traditional Nepalese dinner.
